Kiwifruit Parfait

Ingredients   4 kiwifruit, peeled & diced 400g plain yoghurt Juice of 1 lime 2 tablespoons honey 1 cup muesli Mint sprigs Berries (optional) Preparation In a bowl, combine the yoghurt, lime juice and honey. In 2 small cups or bowls, layer the muesli, yogurt and kiwifruit. Top with fresh mint and berries and serve.

Summer Nectarine Platter

Ingredients  4 ripe nectarines, sliced  12 slices prosciutto  50g chunk parmesan   1 red chilli, deseeded and finely chopped  2 handfuls rocket  olive oil  Breadsticks, to serve  Preparation  Arrange the peaches, prosciutto and Parmesan on a large platter, sprinkle over the chilli and scatter the rocket to finish.
